Eating in Season
Try to cook with vegetables and fruits that are in season. They will be fresher, healthier, tastier, cheaper and you can buy them locally.
A yummy way to eat many of the vegetables in season is to roast them in the oven. Spread onions, asparagus, carrots, beets and any other solid vegetable you like on a baking sheet in a single layer. Drizzle the veggies with olive oil and then salt and pepper to your taste. Many people roast for 10-15 minutes. I like to roast them a bit longer-more like 20 minutes. Watch asparagus carefully. It seems to roast a little quicker than some of the root vegetables.
If you like beets consider eating them raw. I like to peel them and grate them along with carrots. The two veggies combined, give a rich earthy taste.
